How to make Thai-sun dried beef jerky

Below is Wai's version. A few years back I had an Asian friend working for me that made something similar to this for me (or actually his wife did for us), hers was best beef I ever ate. What she did differently was she sliced the beef much thinner, added more spices and layered the beef between two screens to keep the flies off the meat and then only pan fried to serve.
